After watching Chef Willy cook up an omelet with rice for Lance on The Lane Chronicles, I haven't been able to eat enough of it. This one is fresh basil/kalamata olive/feta with long grain. YUMMM!

[update] The Pilipino version uses sticky rice, as in Sushi and Chinese food. But training diets are not for fun, rather for fuel, and Lance can choke it down. He has to pack a LOT of calories in, and digesting that amount of food means being careful. Am I going to have to make another one for dinner? My favorite version is a thai omelet with onions and ground pork, topped with Sriracha rooster sauce, fish sauce, and cilantro. Also, the rice is a great idea, but even better when you get some leftover rice and cook it into the omelette with some cheese. MMMMMMM. But growing up in the 70s in SoCal, we didn't always have the luxury of the local Pilipino store until the early 80s. We quickly ran out of Jafran/Mufran (because we had the same breakfast for dinner, of course!) and good ol' ketchup was the proverbial stand in. |
