I'm on the wrong side of the MetroPlex to be able to help with group rides, but for routes, you might call the Rowleet Parks & Rec Dept. and see if they have any route maps from the Twin Lakes Challenge ride they held a couple of weeks ago. Hi, I ride out that way quite often, there are lots of good quiet country roads on the West side of the lake, North of Rowlett, East of Hwy 78. Some of the best ones are gravel, so if you have decent wheels/tires let me know.

We have a group that ride from Rockwall on the weekends and routes from 30-60 miles. Normally ride @ 10:00 on weekends. Riding tomorrow on Sunday from Bicycles Plus at 10:00 am. Join us.
