I've been looking at options for a winter camp down in Arizona and stumbled upon this one. I know team building is sometimes part of winter camps, but this one goes a bit far (check out the accomodations).

Another option I'm looking at is just heading down solo and mapping out some routes before I go. Anyone know of any sites that have road cycling routes around Tucson?

I've seen this site. No mountains to climb in Alerbama, although the price is right.

One huge climb that's easily accessible (Mt. Lemmon). I lived there for 8 years and the Winter riding is good, and to make things a bit tougher, you should get some wind at that time of year too. If you call Full Cycle on Speedway Blvd. or Sabino Cycles they can hook you up with some group rides. Every Sat morning there is the "Shoot OUt" where about 100 cyclists meet and ride en masse out to a remote spot where the last 5 miles are a drag race. Many then keep going to make a big loop out of it. Personally, if you're going out that way to have a camp, stay on the East Side. If you go, shoot me an e-mail so that I can give you some more details.
