I run 8spd Veloce and was hoping to upgrade my current campy wheelset to either the Zonda or Scirroco that are 9/10 spd compatable. I don't need to upgrade my current gearing - my 8 spd is fine but I would like better wheels. Can anyone suggest opptys to upgrade a wheelset while maintaining 8 spd compatability??

I run 8 speed Athena on my training bike. The hub on there is a 10 speed Veloce and it works no problem. I got a pair of 10 speed Record compatable Mavic Ksyriums when I bought my race bike last year. I tried to put the Ksyrium wheels on my 8 speed training bike and found that the freewheel or freehub was slightly wider than my 8 speed cassette. ie. all the cogs fitted on fine but I needed to put a very thin spacer (less than 1mm) on first before the cassette, to enable me to tighten the lockring properly. To answer your question, in my experience yes it can work with a bit of fiddling about.
