I may be doing my first road race this coming weekend and would like to know what to do and what to avoid before the race. I'll be on one of the beginner classes and will do 3 laps for 27.6ks.

I have no idea on how to prepare for it other than hydrate the night before, a guy told me on Sunday to avoid green vegetables 2 days before the race and not to drink milk on race day, does that makes sense?

No, not really.

I don't see any reason to avoid any color vegetable two days before a race. That's utter and complete crap.

As for not drinking milk on race day, it only makes sense if you have issues with milk. Some people do, some people don't.

I'm sure you've done hard rides before, so you know what your stomach can and cannot handle. There's really no reason to do anything different. Just get a good warm-up in before the race.
