Two questions about building a disc cyclocross (not for competitive racing) on an Airborne Carpe Diem AL frame.
A: Looking at Mavic Speed City wheels. How can they fit both Road and MTB? Is there a spacer included for the wider 135mm spacing?
B: I'd prefer to build with Ultegra, but can I use the brake levers with Avid Mechanicals? If not, what comparable components do I need to match up? Thanks.

I owned speed city wheels, note the rear is 135 mm spacing for the disks. They are a heavy, sturdy wheel. I had a problem with the bearings in the freehub failing and had to send the whole wheel back to Mavic, where it took them 6 months to fix under warranty, their fix was to lace in a whole new hub.
Avid has the Ball Bearing Road disk brake. The lever arm is adjusted to work with the cable-pull of a road lever.

The Speed City is 135mm.

FWIW, Sheldon Brown sez that most 130 spaced frames can take 135 spaced hubs -- even Aluminun frames. I think the only 130 spaced road disc hub on the planet is the Velomax/Reynolds Sagitta.
So you might think about getting some XT hubs laced to Open Pro hoops. You can get those reasonably priced plus it's a wheelset that's servicable immediately by any bike shop -- or yourself if you're so inclined.
Ditto others about the Avid mechanicals ...
