Who would you recommend to hand build wheels? I have a pair of Sachs hubs that I would like to use but don't know where to take them to. I would prefef someone in the Toronto area as I live close to downtown and only ride my bike. Thanks in advance for any recommendations.

I've used Racer Sportif on Bloor to build a wheel for me. Some people on this board have had issues with them (just do a search) but they've always treated me well and done a good job.

If you are looking for a good wheel builder, go and find Nestor from Urbane. Check Urbane and ask for Nestor, he'll build you a pair of bullet proof wheels.

Check their site for hours as they are not a regular retailer. Great place to admire classic bikes, excellent work at reasonable prices. (no relation or connection)

I'd also recommend Cavern Cycles, which is on Queen around Jarvis. Keith is a good guy.
