I will preface this by saying that I know virtually nothing about DA.
I am thinking that that I would like to rebuild my Merckx 7-11 with DA parts.
I will use downtube shifters, 6 or 7 speed.
What am I looking for in terms of series numbers?
Front and Rear Derailleurs, seatpost, hubs, shifters.
All help appreciated.

7400 or 7401 should get you there.
Shimano introduced the 7400 series in '84, which was 6spd SIS shifting.
7401 was released in '86 and introduced the 7spd gear. 7402 was out in '89 and that was 8spd Uniglide.
I'd think 7400 is probably your best bet, since 7-Eleven was around from '81-'91.
Dura-Ace EX was probably their first set-up, as that was the top line until 7400, but I'd bet it's tough to get ahold of. Lots of 7400 stuff on eBay if you're patient.
