Is this for real? Ive always just stopped at a rest point and taken care of things. I had no idea this could be done while riding.

Not a new story. Practiced mostly by racers, who understandably are reluctant to stop if there'a a way to avoid it. Tour de France telecasts occasionally show it (discretely). As you might imagine, some riders are very good at it, others not so much. Probably not a skill worth the trouble to acquire for a recreational rider. Also probably illegal, or at least socially unacceptable, in the places most of us ride.
There's an old joke about learning this skill to understand the flavor of the international peleton; first you're Russian, then European, at last you Finnish.

Its funny to watch a European race and seeing the Peleton stopped by a train or something. Suddenly you see 200 guys jump of their bikes and start peeing right at the side of the road. The spectators get a little more show than they were expecting.
Then Phil Ligget says "I guess its time for a nature break, we'll be right back"
