I used to have a Bianchi Infinito CV (2014) and it seriously rode the smoothest out of anything I've ridden on 25mm tires, it didn't get rid of serious hits much, as it doesn't have a suspension obviously, but it felt like all the small textures/imperfections of the road would be wiped out.. I'm sure more current models have a similar ride quality (I'd hope so at least)..

I used to run a one piece carbon stem/handlebar, I would say it was more 'comfortable' as there was noticeable flex from the drops.. Long story short I hated it as it felt as if the bars were shaky, and went back to a normal aluminum handlebar setup and felt way better, especially descending/cornering from the drops.. I'm sure this isn't the case with all carbon bars but rock solid aluminum bars are the way to go for me, they simply work. If you find they are too jarring just double wrap them (the extra tape is certainly less expensive than shelling out for a carbon setup)..

I can't talk about Cervelo because I haven't ridden it, but My Colnago C-59 has an incredible ride quality. the new C-64 should be similar.
