It's easy enough to change the freehub body if it's got Shimano now. I changed my 350s over from Shimano to Campy with a $40 freehub body I bought on CL.
Wheels are worth around $300 maybe $350 depending if the seam is not showing on the rear rim. Are the brake grooves still there or have they been smoothed over? lightly used with 2-3K miles as climbing wheels means the rims have recieved braking wear and if the grooves are smooth or the seam is easily seen then they'll have less value. i have a set that are that old.
It's now a $65.00 hub and you have to re-dish the wheels after you do this. I did this on one set (a year ago) but if I'm gonna buy more I want to find a Campy set. Unless of course I get a screaming deal on a Shimano set....
