    Hey there
Iím currently riding a medium 2018 Canyon Aeroad which Iím finding to be a little small.
Iíve been offered a swap. Two older bikes for the new canyon.
    The two are

I donít know a huge amount about models and components.

go with the Look, it's closer to an even trade (assuming everything checks out on the Look).

The Giant is a no go, unless Giant owner throws in some cash

Thanks but Its actually the look and the Giant for the Canyon.
The Canyon is brand new. My concern is the age of bikes and components and also if its a fair swap

Unfortunately this is just one of the problems when buying online. Have you considered taking your Canyon to a reputable bike shop to check for proper sizing and see if they can properly fit you on it?

Is this guy taller than you or the same height? Why would anyone with two properly sized "Large" bikes want to swap for a size "medium" bike?

The TCX is a cyclocross bike not a gravel bike.

My suggestion is sell the Canyon and get what you want instead of swapping for 2 used bikes

I'd pay for a professional fitting first with the Canyon with a set back seatpost and a longer stem it might work. If it doesn't, sell it and buy a larger sized newer bike.

Hard to believe the Canyon is too small when you've got a super short and high rise stem on there. Looks more like you need an endurance bike instead of a race bike.

Get a proper bike fit. If the fitter determines the canyon is too small, and the other two bikes are the proper size for you, then sure, I'd do the trade, or I'd see if Canyon will swap the frame for you; they are pretty good about doing that for a low price or nothing at all, depending on when you bought the bike.
    I like to ride fast.
